I did NOT want to make a healthy lunch today. Gigi, my two year old, has a runny, stuffy nose and is a week into potty training and Jay, my four month old, is teething. Why does everything happen all at once?
I mentally scanned my cabinets for something quick and easy to prepare. "Ramen noodles!" my brain chimed in, reverting to it's normal, processed-foods side. "Will Gigi eat Ramen noodles? Do Ramen noodles have any more nutrition than a cardboard box?" I groaned. I just wanted something easy.
But I could be more capable than that. I knew I could, and thus was born this recipe.

Cucumber Fries and Greek-Inspired Dill Dip
Recipe
Prep time: 5 minutes
Ingredients
2 oz cream cheese
1/2 cup Greek yogurt
1/4 cup feta cheese, crumbled
fresh dill
sea salt and pepper to taste
1 large cucumber
your favorite raw veggies, chopped - optional
1/2 cup Greek yogurt

Directions
- Add cold cream cheese to small bowl and stir around until smooth and creamy in texture.
- Add Greek yogurt and feta and stir until well combined. (Mixture will still be chunky)
- Chop fresh dill and add to cheese mixture. Combine.
- Add salt and pepper to taste, or I used Wildtree Rancher Steak Rub. (can be ordered at the Wildtree website)
- Cut cucumber in half width-wise and then in 1/8ths lengthwise to form "fries" for dipping.
Feel free to change this recipe, and ANY recipe, to include what you have on hand. No feta? Use goat cheese or parm. No fresh dill? Dig that Italian Seasoning out of the back of the cabinet. Let me know what items you used to change up this recipe in the comments below!
